A substantial salad is really all you need for a lunch time meal. It will completely fill you up. Back in the day people were saying salad is just for people who like rabbit food, but salads have come a long way since then. Marinated olives with feta and cherry tomatoes

Here is a summer salad recipe that tastes even better if you leave it overnight in the fridge so that all the flavors are absorbed. All you need to do the next day is add some rocket leaves and will have yet more summer salad recipes.

100g olives, pitted

100g feta

100g cherry tomatoes

100ml olive oil

5 sprigs of thyme

5 garlic cloves

5 leaves basil, chopped

  • Put the olives, feta and cherry tomatoes in a bowl and cover with the olive oil, thyme, whole peeled garlic cloves and leave in the fridge overnight
  • In the morning take the bowl out, leaving the olive oil, thyme and garlic behind
  • Add the basil
